    Choose the Right Fitness Device

    Take Supplements to Help with Weight Loss

    While severe weight loss can be a sign of diabetes complications, maintaining a healthy weight is crucial for people with diabetes. Sometimes, though, losing weight can seem nearly impossible. But for people with pre-diabetes or even the early stages of type 2, Endocrine Web notes even a 10 percent weight reduction can mean huge health improvements.

    Continuing to check your blood sugar, managing your diet, and exercising are all smart steps toward better health (and weight loss). You can also add healthy supplements to encourage weight loss.   • New Chefabetic Fine dining: Pumpkin, cabbage & cod

    When I almost half a year ago got my diagnosis, type 1 diabetes, I didn’t knew anyone with the condition. Therefore I arranged a “Diabetics Dinner”, only a month after my diagnosis, where I invited four unknown people with diabetes to my home. (One of these also happened to be Sophia who then worked for AnnaPS).
    This is an updated version of one of the dishes I served for this particular dinner. At first glance it may seem time consuming but remember that both the chicken broth and the baked pumpkin runs itself on the stove and in the oven.

    4 Persons

    Baked pumpkin

    1 big butternut pumpkin

    cold pressed rapeseed oil

    seasalt

    Preheat the oven to 175°. Cut off the ends of the pumpkin and scoop out the seeds with a spoon. Drizzle with rapeseed oil, season with salt and bake the pumpkin in an ovenproof tray with the skin side up until it is completely soft, about 60 minutes depending on size. Let cool slightly before peeling the pumpkin with a knife and then break it into rustic pieces.

    Pumpkin puree

    half of the baked pumpkin

    lemon juice

    salt

    Mix the pumpkin in a mixer. Season with lemon juice and salt. Reheat on low heat to avoid burning the puree.

    Blanched black cabbage

    300 g black cabbage

    butter

    salt

    Gently pull the cabbage leaves from the stems. Break down into smaller pieces and wash properly. Fill a large pot with water. Add butter and salt the water properly. Bring to the boil. Dip the cabbage just before serving for about 30 seconds. This is called blanching.

    Pan fried cod fillet

    600 g cod fillet with skin

    rapeseed oil

    butter

    seasalt

    Portion the fish into four equal pieces, 150 grams. Heat a frying pan. Salt the fish and fry it with the skin side down over medium heat until nice color, about two minutes. Turn the fish and fry for another 1-2 minutes until the fish is properly cooked. I usually start frying in rapeseed oil, since the oil can withstand higher heat and towards the end I add a dab of butter for the good taste.

    Buttered chicken broth

    1 kg chicken wings

    1 onion

    1 carrot

    1 bay leaf

    5 thyme twigs

    butter

    apple cider vinegar

    Rinse the chicken thoroughly under running water. Place the wings in a pot together with vegetables and herbs and cover with water. Bring to the boil and simmer for 3 hours without a lid. Skim the surface once in a while. Strain the broth and reduce until about half remain. Add a big dab of butter in 2 dl reduced chicken broth just before serving and season with vinegar. Mix together with a hand blender.

    Arranging the dish 

    I serve this dish with fried mushrooms (I used oyster mushrooms), roasted pumpkin seeds and parsley. If you don’t have the time to cook your own broth, it works as good with the one you can buy at supermarkets. Though no, it does not. Try to boil your own, and you will notice the difference.

    När jag för snart ett halvår sedan fick min diagnos, typ 1-diabetes, kände jag ingen med sjukdomen. Därför anordnade jag redan efter en månad som konstaterad diabetiker en ”Diabetics Dinner” där jag bjöd in fyra okända personer med diabetes till mitt hem. (En av dessa råkade dessutom vara Sofia som då arbetade för AnnaPS).
    Detta är en uppdaterad version på en av rätterna jag bjöd på under just denna middag. Vid en första anblick kan den verka tidkrävande men kom då ihåg att såväl kycklingbuljongen som den bakade pumpan sköter sig själv på spisen, respektive i ugnen.

    Recept för 4 personer 

    Bakad pumpa

    1 lite större butternutpumpa

    kallpressad rapsolja

    flingsalt

    Sätt ugnen på 175°. Skär bort ändarna på pumpan, klyv den längs med i mitten och gröp ur kärnorna med en sked. Droppa över rapsolja, salta och baka pumpan i en ugnssäker form med skalsidan upp till den är helt mjuk, ca 60 minuter beroende på storlek. Låt svalna något innan du skalar pumpan med hjälp av en kniv och därefter bryter den till rustika bitar.

    Pumpapuré

    hälften av den bakade pumpan

    citronsaft

    salt

    Mixa pumpan ordentligt i en hushållsmixer. Smaka av med citronsaft och salt. Värm upp på låg temperatur under ständig omrörning då purén lätt bränner vid.   

    Blancherad svartkål

    300 g svartkål

    smör

    salt

    Ansa kålen genom att försiktigt dra bladen från stjälkarna. Bryt ned i mindre bitar och tvätta kålen ordentligt. Fyll en rymlig kastrull med vatten. Tillsätt en rejäl klick smör och salta vattnet ordentligt. Låt koka upp. Doppa svartkålen precis före servering i ca 30 sekunder. Detta kallas för att blanchera.  

    Stekt torskfilé

    600 g torskfilé med skinn

    rapsolja

    smör

    flingsalt

    Portionera fisken till fyra lika stora bitar a 150 gram. Hetta upp en stekpanna. Salta fisken och stek den med skinnsidan nedåt på medelhög värme tills den fått en fin stekyta, ca 2 minuter. Vänd fisken och stek ytterligare 1-2 minuter tills fisken är färdig. Jag brukar först steka i rapsolja då oljan tål högre värme och mot slutet tillsätta en klick smör för den goda smakens skull. 

    Smörad kycklingbuljong

    1 kg kycklingvingar

    1 gul lök

    1 morot

    1 lagerblad

    5 kvistar timjan

    smör

    äppelcidervinäger

    Skölj kycklingen ordentligt under rinnande vatten. Placera vingarna i en kastrull tillsammans med grönsaker och kryddor, täck med vatten. Koka upp och låt sjuda 3 timmar utan lock. Skumma av ytan med jämna mellanrum men rör inte runt i kastrullen, då blir fonden lätt grumlig. Sila av fonden och reducera tills cirka hälften återstår. Tillsätt en rejäl klick smör i 2 dl reducerad kycklingbuljong precis före servering och smaka av med vinäger. Mixa ihop såsen med en stavmixer.  

    Upplägg 

    Jag serverar den här rätten med nystekt svamp (jag använde ostronskivling), krossade pumpafrön och hackad kruspersilja. Har du inte tid att koka din egen fond funkar det nästan lika bra med köpt. Fast nej, det gör det inte. Testa att koka egen så märker du skillnaden.
